Buckwheat Waffles With Citrus Butter
1 1/2 cups buckwheat flour
3 tablespoon coconut sugar
2 teaspoons baking powder
1 teaspoon baking soda
generous pinch of kosher salt
1 3/4 cups buttermilk
1 teaspoon vanilla extract
1/3 cup melted coconut oil
1 large egg, whisked
2 additional egg whites, whisked until soft peaks have formed
1 stick butter unsalted, at room temp
1 teaspoon powdered sugar
2 teaspoons finely grated orange zest
In a small bowl, mash all ingredients together with a fork. Place citrus butter in a ramekin. Cover and refrigerate.
Warm maple syrup
4 large navel oranges or 6 mandarins, peels removed and sliced into pinwheels
Preheat your waffle maker.
In a large mixing bowl, combine all dry ingredients: buckwheat flour, sugar, baking powder, baking soda, and salt. Then stir in buttermilk, vanilla extract, melted coconut oil, and whisked egg. Finally, gently fold in egg whites. Don’t overmix – the batter should be streaky with egg white.
Let the batter sit for 10 minutes before pouring it into the waffle maker.
Make waffles as per the instructions on your waffle maker. Serve with citrus butter, sliced oranges, and warm maple syrup.
