(Salad on a stick – great easy appetizer – crowd pleaser)
1 small watermelon, rind removed and scooped into 1 inch balls
8 ounces feta (firm/not-crumbly), cut into 3/4 inch cubes
1 bunch fresh mint leaves
4 Chilean oranges, skins removed and flesh cut into wedges, or use segments on Mandarin orange
extra virgin olive oil
flaky sea salt
special equipment: 6-inch wood skewers
Place one ball of watermelon, a cube of feta, one mint leaf, and a wedges of orange on each skewer. Arrange on a platter.
Just before serving, drizzle extra virgin olive oil lightly over the skewers, then squeeze the juice of one lime over the skewers as well. Sprinkle everything with flakey sea salt and a little bit of cayenne pepper if you please.
Serve the skewers with extra lime wedges on the side of the platter.
