Citrus Golden Milk Chia Pudding


2 1/2 cup unsweetened coconut milk

1 teaspoon ground turmeric

1 teaspoon freshly grated ginger

1/3 cup honey

½ teaspoon freshly grated orange zest

optional: for a true golden milk, add a few grinds of black pepper

½ cup black chia seeds

2 Chilean mandarins, or 1 large Chilean navel orange


Infuse coconut milk with turmeric and ginger, by warming ingredients in a pan for 5 min. Turn off heat. Stir in honey, orange zest, and black pepper if desired. Let cool.

Thoroughly whisk chia seeds and a pinch of salt into room-temperature turmeric/ginger milk. Let pudding thicken overnight in the refrigerator. In the morning, top each serving with orange slices or mandarin segments.


Serves 4-6
